FETTUCINE AL GAMBERI

1 lb. Wide Fettucine Noodles
1 Tbsp Salt (optional)
6 oz. Light Olive Oil
2 Tbsp Minced Fresh Garlic
1 cup Diced Green Bell Pepper
1 cup Diced Fresh Roma Tomatoes
24 each Large Shrimp (peeled & deveined)
1/2 bunch Fresh Parsley (minced finely)
1 cup Fresh Basil (cut into fine strands)
Salt and freshly ground pepper -- to taste

Boil the pasta with the salt (if desired) in rapidly boiling water until al dente (check package directions for recommended time). Prepare all the other ingredients before putting the pasta in the water. When the pasta is half cooked, place the olive oil in a large skillet over medium heat. When oil is hot add the garlic, bell pepper and tomatoes to the skillet. Sautee gently for one minute then add the shrimp. Toss the shrimp and vegetables in the pan for two or three minutes until the shrimp is just cooked through. Drain the pasta in a colander and immediately place it into a large serving bowl. Add the parsley and basil to the skillet and toss for 30 seconds. Season with the salt and pepper and give the pan one more toss. Pour the shrimp evenly over the pasta and top with freshly grated Parmesan cheese if desired. Serve immediately.
