OVEN ROASTED CHICKEN FLORENTINE

Discription: Oven Roasted, Herb Marinated, Chicken Breasts layered with Spinach Stuffing, applewood smoked bacon, and Mozzarella cheese. Served on yellow orzo and draped with a Lemon Butter Sauce.

Ingredients:
1 - 5 oz. chicken breast-herb marinade
1 - 6 oz. airline breast-herb marinade
1/4 cup - spinach stuffing
1 tbsp. - bacon pieces
1 slice - mozzarella sliced
1 cup - orzo - yellow
2 fl. oz. - lemon beurre blanc
tyme to garnish
cheese toast

Procedure:
1. Grill skin side of airline breast until it beings to crisp. Remove from heat. Reserve.
2. Place both marinated breasts on baking pan, propping drumette with frill pick if necessary.
3. Bake in 400 degree oven for 8 - 10 minutes, until done. (165º internal temp). Remove from oven.
4. Heat bacon & spinach stuffing for 20 seconds in microwave.
5. Top 5 oz. breast with warmed stuffing, bacon and cheese. Put in melter until cheese melts.
6. Heat orzo in microwave for 1 minute.
7. Mound hot orzo in center of plate.
8. Place airline breast on top of 5 oz. stuffed breast and transfer to plate next to orzo.
9. Ladle lemon beurre blanc over entire stuffed chicken, allowing to pool on plate.
10. Garnish with thyme. Place cheese toast on rim of plate.
11. Serve immediately.
