OVEN ROASTED ALASKAN HALIBUT

8 oz. halibut
2 tbsp olive oil
1/2 tsp kosher salt & pepper
1 cup black-eyed pea salad
4 oz. chicken broth
4 oz. spinach, blanched
2 oz. roasted red pepper beur
1 tsp parsley, chopped
1 piece kale
2 lemon wedges
1 dinner roll

1. Rub halibut with olive oil and season with kosher salt & pepper.
2. Place on baking sheet and cook in 350° oven until just done. (10-12 minutes)
3. In saute pan, toss black-eyed pea sald with chicken broth.
4. Mound hot black-eyed pea salad in center of plate.
5. Heat blanched spinach in microwave. Cascade down one side of peas.
6. Place roasted halibut on top of black-eyed peas and spinach.
7. Ladle roasted red pepper sauce across fish.
8. Place lemons on top of kale on the edge of the plate.
9. Place dinner roll on rim of the plate.
10. Serve immediately.

Yield: 1 quart.
