OVEN ROASTED CHILEAN SEA BASS

8 oz sea bass fillet
1 tbsp olive oil blend
1/4 tsp kosher salt & pepper
1 cup orzo, cooked
2 oz olive-mustard butter
3 oz haricot vert
1 tbsp butter
1/4 tsp kosher salt & pepper
2 oz grape tomato concassé
1 piece kale
2 lemon wedges

1. Rub fish with oil and season with salt and pepper.
2. Bake in 350 degree oven for 10 minutes until done.
3. Place orzo in bowl with olive-mustard butter and cook 45 seconds.
4. Toss orzo with melted butter.
5. Mound orzo in center of plate.
6. Saute green beans with butter, season with salt & pepper.
7. Place beans on plate next to orzo.
8. Place roasted sea bass on orzo and top with grape tomato concassé.
9. Garnish with kale and lemon wedges.
10. Serve immediately.
