Fettuccine Romano

Sauce:
Ingredients:
1/2 lbs. Ground Chuck
1/2 lbs. Hot Italian Sausage
1/2 cup Onions - diced
1/2 tsp. Red Pepper Flakes
2- 28 oz. cans Whole Pear Tomatoes - drained and hand crushed
1/4 tbsp. Garlic - minced
1/2 bunch Parsley - minced
2 tbsp. Oregano - dried, whole
1 tbsp. Kosher Salt
1 1/2 tbsp. Black Pepper - ground
8 oz. Roasted Red Bell Peppers - drained, cut into 1/4" strips
1/2 cup Olive Oil - extra virgin
2 cups Heavy Cream


Procedure:
1. Heat pan over high flame.
2. Crumble ground chuck and sausage into 1/2" pieces.
3. Add meat to pan and brown.
4. Add onions and red pepper flakes. Cook until onions are translucent.
5. Add crushed tomatoes, bring to a simmer.
6. Stir in garlic, parsley, seasonings and roasted pepper strips.
7. Simmer for 15 minutes.
8. Stir in cream, bring back to simmer.
9. Remove from heat and stir in the olive oil.
10. Pour into food storage container.
11. Cook 2 lbs. fettucine al dente.
12. Mound hot pasta on platter.
13. Cover with sauce.
14. Top with shredded parmesan cheese and fresh basil.
