1 red bell pepper, minced 1 yellow bell pepper, minced 2 oz. celery, minced 1/3 cup green onion, minced 1 tsp garlic, minced 1/2 oz. parsley, chopped 1/2 oz. lemon juice 1 tbsp kosher salt pinch cayenne pepper 20 oz. mayo 3 lb poached shrimp
Dressing: 1. Mince bell peppers in food processor, drain off excess liquid. Place in mixing bowl. 2. Mince celery in food processor and add to bowl. 3. Add remaining dressing ingredients and stir to blend.
Shrimp Salad: Toss 3 lb poached shrimp with 1/3 quart of dressing.
